Valnerina Lentil and Buckwheat Soup
It is a traditional Umbrian dish, nutritious and healthy, prepared with the prized local lentils and buckwheat (a Slow Food Presidium), a food present since the Middle Ages. The wheat is cooked with lentils and herbs (carrot, celery, onion), then served with plenty of Umbrian extra virgin olive oil.
